Indulge your mango mania further with these mango dishes

Here are some more delicious mango recipes for the summer!
Chennai: Chef Jodha Ram of Khandani Rajdhani shares recipes using mangoes, which is in season now:
MANGO JALEBI
Ingredients :
l 1 Alphonso ripe mango
l 300 gms sugar
l 1 gm kesar
l 250 gms water
l 250 ml milk
l 100 gms curd
l 200gms maida
l 500 gms ghee
Method :
l Mix maida and curd one day in advance to create a batter.
l Melt sugar with water to make a syrup out of it, add milk to the solution to remove the blackness of the syrup.
l Cut mango slices and keep it aside.
l Take a kadhai and heat it with ghee, dip the mango slices in the batter and fry it in the kadhai. Once fried soak it in the sugar syrup and take out to serve.

INGREDIENTS
l Mango pulp: 1/2 cup
l Gram flour (besan): 3 tablespoons
l Turmeric powder: 1/4 teaspoon
l Salt: to taste
l Buttermilk sour: 3 cups
l Oil: 2 tablespoons
l Asafoetida: a pinch
l Cumin seeds: 1/2 teaspoon
l Curry leaves: 6-8
l Green chillies, chopped 3
l Jaggery (gur): 1 tablespoon
METHOD
l Take mango pulp in a bowl, add gram flour, turmeric powder, salt and mix with a whisk to make a smooth mixture.
l Add buttermilk and mix well.
l Heat oil in a pan. Add asafoetida, cumin seeds, curry leaves, green chillies and sauté. Add the mango mixture, jaggery and water to get the required consistency.
l Once the mixture comes to a boil, reduce heat and simmer for five minutes. Serve hot with steamed rice.
