Hyderabad: Debunking myths surrounding eating vegetables, consultant nutritionist from Fernandez Hospital, Ms Janaki Srinath said, “When one is eating vegetables, wash them under running water for cleaning any pesticide resi-dues. It is a myth that you must peel all vegetables.”
“Another myth is that a lot of green leafy vegetables will cause diarrhoea or dysentery. The fact is that green leafy vegetables are rich sources of folic acid and iron and have all the nutrients that our modern lifestyle demands. One must start consuming small quantities and then increase the intake.”
She also said that vegetables must not be deep fried or heavily loaded with oil as one will end up eating more salt and spices. “They won’t have the desired results. They must be lightly fried and only reasonable cooking is okay,” she said.
Another myth is that it’s not okay to eat raw vegetables. Ms Janaki said, “Salads are good and one should make them at home in the right technique. Eating fresh salad is good. Tubers must be properly washed and peeled and there must a right balance of vegetables.”
“One must eat a huge variety of vegetables and go by the seasonal ones. No vegetable can replace the other vegetable,” she said.
