Navaratri special: Singhara Kachori
Mumbai: It's the third day of Navaratri festival and we are all prepared for some more enjoyment and fun.
Today Durga's third facet "Chandraghanta", is worshipped, she is believed to bring peace, prosperity and tranquility in our lives.
She wears a half moon (Chandra) on her forehead, which looks like a bell (ghanta).
According to the mythology, she posses the great strength to fight against the demon and win every battle.
As this festive season continues, here’s what we have in store for you. We bring you a delicious recipe of crunchy “Singhada Kachori” so you can enjoy your fasting days.
Recipe of the day: Singhara Kachori

Ingredients:
· 1 cup Singhara flour or Water chestnut flour’
· 4 boiled potatoes
· 1 ½ green chillies (finely chopped)
· 1 tsp Sendha Namak / Rock salt
· 2 tbsp coriander (chopped properly)
· Oil to fry
Procedure:
· Make a dough of Singhara flour, make sure its texture is soft.

· Mash the boiled potatoes, add chopped green chillies, rock salt, coriander and mix it all together.
· This mixture will be used as the filling for the kachori.
· Divide the dough into equal parts and form small balls out of it.
· Take one piece of dough and press it against an even surface with your hand, fill it with some potato filling and fold the edges of the dough properly. Repeat the same procedure with the rest of the dough balls.

· Heat ghee in a frying pan for 4-5 minutes and then add 2-3 pieces of kachori in it.
· Fry the kachoris till they turn golden brown.

· After cooking it place them on the oil absorbing napkins or normal paper napkins.
· Garnish it with chopped coriander.
· Singhara Kachori is ready to be served.
Tip: Serve it with hot Aloo ki sabzi, curd and mango-mint chutney.
