Hyderabad: The Indian Institute of Packaging (IIP) is developing a new packaging technology for tender coconut water to enhance its shelf life while also retaining the natural flavour.
Technologies to package coconut water are already available but they don’t help retain the flavour. IIP said the shelf life will be about 28 days with the IIP technology use and the cost would be about Rs 10 only for 200 ml.
Indian Institute of Packaging director Dr N.C. Saha said, “In coastal areas like Kerala, huge number of coconuts are produced and the idea is how best we can serve the coconut water to consumers.”
He said the project has been taken up in collaboration with IIT Bombay and sponsored by the ministry of food processing. He said the packaging technology will help retain the natural flavour and texture.
