Caramelised bananas

Ingredients
- 2 medium bananas
- 2 tsp of butter
- 1½ tbsp honey
- Pinch of coarse sea salt
Method: Slice the bananas lengthwise. Melt butter in a pan and fry the bananas until golden on both sides. Add honey and let it caramelise for a few minutes. Add the salt and serve warm on toast with a scoop of vanilla ice cream. Caramelised bananas can be served with plain cakes or French toast or pancakes for an indulgent weekend spread.
Bread & butter pudding

Ingredients
- 400 ml milk
- 100 gm cream
- 75 gm brown sugar
- 5 gm cinnamon powder
- 3 gm nutmeg powder
- 5 eggs
- 50 gm butter
- 50 gm raisins
- 1 vanilla pod
- 300 gm bread
Method: In a sauce pan, gently heat the milk and cream together. In a large baking bowl, beat the eggs with brown sugar. Add the warm milk and cream slowly to the egg and sugar mixture. Add cinnamon powder, nutmeg powder, raisins, butter and vanilla beans.
Place the bread evenly on the top of the mixture and press down toward the bottom of the bowl so that the bread absorbs the entire mixture. Bake at 160ºC for 40-45 minutes, till the top of the pudding is golden brown. Check if the pudding has set and the raw egg smell is completely gone. Serve hot.
