Banana bread
Ingredients
: 2/3 cup organic whole wheat flour, 2/3 cup Amaranth flour (or roasted amaranth flour), 1 tsp baking powder, 1 tsp baking soda, 3/4 cup chopped dark chocolate, 1/4 tsp salt, 3/4 cup roasted chopped walnuts, 1/2 cup virgin cold pressed coconut oil, 1 cup organic sugar, 2 eggs, 2 tbsp lime juice (fresh), 1 cup mashed banana, 1.5 tsp vanilla essence

Method
Blend eggs, oil and sugar. Add powdered ingredients and blend. Add bananas, lime juice, vanilla essence and blend more. Mix in walnuts and chocolate with a spoon. Pour into a loaf tin (10? x 4 “). Bake at 180 degrees for 45 minutes. Enjoy as the aroma fills your home! You can make this in madeleine moulds — bake for 25 minutes.

A Tip
Amaranth flour is available in local organic stores. In Parisara, Malleswaram and Food Hall, 1 MG Mall. And it’s a key ingredient and makes banana bread dark brown, chewy and melt in the mouth! If you absolutely can’t find it, substitute with another 2/3 cup whole wheat flour.
