Kashmiri Cuisine is rich, modern, and vegan-friendly, says home chef Aparmita

Hyderabad: Are you a foodie, who likes to try different cuisines? If yes then here's a culinary event that offers your taste buds a wash-out with the flavours of Kashmiri cuisine, The five-day event at Sheraton's Feast Caffe will continue till September 27 in Hyderabad, by Aparmita Sapru, a Home Chef.

In an exclusive interview with Deccan Chronicle, Chef Aparmita shared a few things about the event. Here are the excerpts:

What inspired you to focus on Kashmiri Cuisine?

Because I am a Kashmiri Pandit I wanted to delve deeper into it and understand the nuances better, that's why I chose my cuisine.

Are there any signature dishes that you are highlighting at this event?

Yes, there are some dishes that we are highlighting at this event, Such as Dum Aloo, Roganjosh, Yakhni Pulao, Mutton Yakhni Pulao, Nadru kebab, Mutton Shami kebab, Methi Chicken, Kong Phirni etc.

What do you hope attendees will take away from experiencing Kashmiri Cuisine?


I think it will be a wholesome experience and they will understand the variation that Kashmiri food entails. Probably they don't have any idea of the amount of vegetarian as well as non-vegetarian food that this cuisine has, and through such events, they will realize that Kashmiri food is not just about a few dishes. It has a vast range of dishes.

Are you planning more such events in Hyderabad or any other cities?

Yes, I am looking forward to having more festivals in various cities.

How do you see the future of traditional regional cuisine like Kashmiri cuisines evolving in the modern culinary world?


The notion about Kashmiri food is that it is very rich. And yes, in every cuisine, certain dishes are rich, but some dishes can be made less rich so they can be made and eaten regularly, and they will still taste as good. So it's going to survive and do very well because it's got this. We also have so many vegan dishes in Kashmir. It's a very modern Cuisine and it has a good future.
