Koraishutir Kochuri

Koraishutir Kochuri is a traditional Bengali stuffed puri recipe which combines tender green peas and aromatic spices with a crispy, golden exterior. Go the extra mile by cooking for your dad - the warmth, love and deliciousness of the Koraishutir Kochuri.

Ingredients -

For the dough-

• 150 g Maida (all-purpose flour)

• Salt, to taste

• 1.5 tsp sugar

• 1 tbsp oil

• Warm water, to knead the dough

‍For the filling -

• 1.5 cups boiled green peas

• 2-3 Green chillies, slit

• Salt, to taste

• 1/2 tsp Sugar

• 2 tsp oil

• 1/4 tsp kala jeera

• ½ tsp Hing

• 1 inch piece of ginger

• ½ tsp Cumin powder

• 1/2 tsp coriander powder

• ¼ tsp turmeric powder

• ¼ tsp garam masala

• Oil, for frying the kochuri

Method -

1. Mix together all the ingredients for the dough and knead a soft dough.

2. Cover and set aside for 30 mins.

3. Grind the peas, chillies, salt, sugar, ginger to a fine paste.

4. Now, heat oil in a kadhai . Add in kala jeera and asafoetida.

5. Now, mix in the green peas paste, powdered spices and cook on a medium flame until the mixture leaves the sides of the kadhai . Be patient and keep stirring constantly to prevent the mixture from burning.

6. Remove and set aside to cool.

7. Divide the dough into equal portions and roll out to flatten.

8. Stuff the filling and bring the edges together to close it.

9. Use little oil and roll the kochuris gently. Do not make it too thin else they won't fluff up.

10. Deep fry into hot oil on a medium high flame till golden brown from both sides. Ensure to press them gently while frying. This will fluff them up.

11. Remove, drain the excess oil and serve hot with Bengali style alur dum
