We also have groundwater charging systems, where we pump water into the natural sources during the monsoon.” The resort also uses solar power, with 1.25 lakh liters of land dedicated to solar panels.

We also source all our products locally, from milk to honey. We want to support the local community and create a sustainable ecosystem.”
You will be treated to a delicious spread of Maharashtrian cuisine at one of their specialty restaurants, Perch. “We have curated our menu to showcase the local flavours,” Girish explained. “We work with the local women and source all our ingredients from the surrounding villages.” The food was incredible, with each dish more delicious than the last. I was particularly impressed by several innovative delicacies made from Ambadi, a local leafy vegetable that was both flavourful and nutritious.
You cannot miss the beautiful herbariums that adorn the walls at the restaurant. “We have created these herbariums using local plants and flowers,” Girish said, adding, “We want to showcase the beauty of nature and create a sense of wonder in our guests.” The attention to detail is evident everywhere, from the beautifully landscaped gardens to the carefully curated art pieces that adorn the walls.
