Indulge in wholesome desserts with a European twist this Dev Diwali

As Dev Diwali approaches on November 15, 2024, the festive spirit is in full swing—and what better way to celebrate than with delicious, guilt-free sweets? Chef Guntas Sethi, the Ambassador for the European Union’s ‘More Than Food’ campaign in India, brings you two innovative treats: Millet Motichoor Laddoo and Berry Sandesh. These desserts combine traditional flavors with a healthy twist, thanks to their high-protein, low-sugar ingredients and carefully sourced European elements.

Millet Motichoor Laddoo
Ingredients:

  • 1 cup little millet/foxtail millet
  • 2 tbsp butter from Denmark
  • A pinch of saffron
  • 1 tbsp elaichi powder
  • ½ tbsp jaggery powder
  • 2/3 tbsp honey from France

Method:

  1. Soak the millet in 2 cups of water for 2-3 hours.
  2. Heat butter and cook the millet in it, adding 3 more cups of water. Cover and cook for 20-30 minutes.
  3. Once cooked, add saffron-infused water, elaichi powder, jaggery powder, and honey.
  4. Let it cool for 5-6 minutes, then shape into laddoos.

Berry Sandesh
Ingredients:

  • 500 grams malai paneer
  • 2 tbsp honey from France
  • 2 tbsp reduced-sugar fruit spread from Austria
  • Fresh berries from the Netherlands
  • Roasted nuts

Method:

  1. Knead the paneer with honey and fruit spread until smooth.
  2. Set it in a tray lined with parchment paper.
  3. Top with fresh berries and roasted nuts.
  4. Chill for 2-3 hours, then cut into pieces and serve.
