From the Heart to the Pan: A Father’s Day Treat
For many of us we associate our fathers with the smell of roasting coffee. This delightful yet simple recipe of Expresso Panna Cotta is a tribute to the early morning and late-night coffees with your dad. The recipe has been made in the Stahl Artisan Hybrid series by Nehal Karkera, Chef - Stahl. He dedicates this recipe to two special father figures in his life – his mother and his aunt. Chef Nehal’s special tip to all the sons and daughters out there is to cook a meal with love and make the day special.
Ingredients:
For the Base:
· Stahl Artisan Hybrid pan
· 2 tbsp espresso
· 350 ml fresh cream
· 15 gm gelatin (bloomed in 50 ml warm water)
· 1 tsp vanilla essence
· 60 gm sugar
For the Espresso Syrup:
· 100 ml espresso
· 3-4 tbsp sugar
To Garnish:
· Espresso syrup
· Chocolate shavings
Steps:
For the Base:
Bloom Gelatin: In a small bowl, bloom 15 gm of gelatin in 50 ml of warm water. Stir until fully dissolved and set aside to let it swell.
Heat Cream Mixture: In a saucepan, combine 350 ml of fresh cream and 60 gm of sugar. Heat over medium heat, stirring continuously until the sugar is fully dissolved. Do not let the mixture boil.
Add Espresso and Vanilla: Remove the saucepan from heat and stir in 2 tbsp of espresso and 1 tsp of vanilla essence. Mix well to combine.
Incorporate Gelatin: Add the bloomed gelatin to the warm cream mixture. Stir until the gelatin is completely dissolved and fully integrated into the mixture.
Pour and Chill: Pour the mixture into individual serving molds or ramekins. Let them cool to room temperature before refrigerating. Chill for at least 4-6 hours or until the panna cotta is set.!
For the Espresso Syrup:
Combine Ingredients: In a small saucepan, combine 100 ml of espresso with 3-4 tbsp of sugar.
2. Cook Syrup: Heat the mixture over medium heat, stirring continuously until the sugar is completely dissolved and the mixture thickens to a syrupy consistency. Remove from heat and let it cool.
To Garnish:
Add Expresso Syrup: Drizzle the prepared expresso syrup over the top of each panna cotta.
2. Garnish with Chocolate:Sprinkle chocolate shavings over the top for an added touch of elegance and flavour.
Serve the espresso pannacotta chilled, garnished with espresso syrup and chocolate shavings. Enjoy this creamy, coffee-flavored dessert with your father, family and friends!
