Savouring Hoi An: A Culinary Journey Through Vietnam's Food Capital

As we wander through the streets of Hoi An, Vietnam's revered food capital, the vibrant colours and enticing aromas of this ancient town unfold like a canvas of culinary delights. Beyond its sleepy facade, Hoi An bursts with energy, from the radiant lantern-lined streets to the azure waters and brilliant blue skies. It's here, amidst warm hospitality and rich cultural heritage, that the true essence of Vietnamese cuisine comes alive.


Nestled within this charming town is the Four Seasons Resort The Nam Hai, a tranquil abode offering breathtaking views and immersive cultural experiences. As I stepped into this serene haven, I couldn't help but appreciate the resort's dedication to showcasing the region's gastronomic treasures. A visit to their organic farm revealed the source of their fresh daily produce, carefully tended by local farmers. The adjacent Tra Que vegetable village beckoned, where I learned the art of crafting delicate rice paper, a staple in Vietnamese cuisine.

As I strolled through the lush green gardens, farmers wearing traditional conical bamboo hats tended to the plants with care. A skilled trainer guided me through the intricate process of stone grinding soaked rice to create the batter, spreading it onto steamer cloths, and filling the paper rolls with freshly picked herbs and vegetables. This hands-on experience ignited my passion for Vietnamese cuisine, and I couldn't wait to delve deeper.

The Nam Hai Cooking Academy presented the perfect opportunity to master authentic Vietnamese recipes. Under the expert guidance of the resort's chefs, I learned the intricacies of pho, Vietnam's beloved national dish, and crafted crispy fried spring rolls and salads bursting with fresh flavours. Each dish was a reflection of the balance and harmony that define Vietnamese cuisine.


As evening descended, It was time for Nayuu, the resort's signature Japanese restaurant, where Chef Alex Moranda weaves culinary magic. This omakase experience transported me on a gastronomic journey through Japan's finest delicacies, from succulent sashimi selections to exquisite sushi creations. Each dish was a masterpiece, paired with premium regional sake and innovative cocktails that danced on the palate. The face-to-face theatrical dining experience had me enthralled, as Chef Moranda presented a 14-course symphony that left me craving more.
Beyond the resort's culinary haven, Hoi An's street food scene beckoned. A Vintage Vespa ride through the picturesque countryside and bustling markets proved the perfect way to tap into this vibrant food culture. We zipped past quaint villages, making pit stops at local hotspots to sample delectable street food. Piping hot broths, aromatic ca phe sua da (Vietnamese cold coffee with condensed milk), and crispy Banh Xeo (Vietnamese crepe-style pancakes) tantalised my taste buds. The kaleidoscope of tropical fruits – from juicy mangoes and durians to succulent dragon fruits – added a burst of colour and flavor to every meal.



As I wandered through Hoi An's ancient streets, I discovered hidden gems and family-run eateries serving authentic Vietnamese dishes. Each bite told a story of tradition, community, and love. From the gentle warmth of the locals to the infectious energy of the markets, Hoi An embodied the essence of South East Asian cuisine.

In this food lover's paradise, every meal was a celebration of flavours, textures, and aromas. As I departed Hoi An, the memories of its culinary landscape lingered, a testament to the town's timeless allure.
