Innovative vegetarian biryanis revolutionize local dining scene
Visakhapatnam: A culinary revolution is underway in the local restaurant scene as innovative vegetarian biryanis are reshaping traditional dining preferences. These specialty dishes are attracting a diverse clientele, from traditional vegetarians to modern plant-based food enthusiasts. These innovative dishes are not only attracting traditional vegetarian customers but are also becoming increasingly popular among vegans and those observing religious fasts.
Moving beyond the age-old debate of whether vegetarian biryani is merely "pulao" in disguise, restaurants are now offering an extensive range of creative variations that have earned their place in the biryani hall of fame. The new menu items include unique offerings such, as Ambur Biryani, Fenugreeks Biryani, Gongura Biryani, Jack Fruit Biryani, Vangi Biryani (eggplant), alongside innovative options like Pot Chana Dal and Black Urad Dal variations.
"The majority of our vegetarian customers are now specifically requesting these specialty biryanis over conventional vegetarian or paneer options," says Srinivas, a local restaurant owner, in conversation with Deccan Chronicle. He notes particularly high demand on Saturdays and during the Karthika month.
Health-conscious diners haven't been forgotten either. Restaurants are introducing alternatives like Chitti Mutyal Biryani and experimenting with quinoa and barley bases instead of traditional rice. Regional specialties like the Thalassery Veg Biryani, prepared with coconut oil and coconut milk, are also making their mark.
The prices remain competitive, ranging from Rs 180 for Black Urad Biryani to Rs 600 for a full plate of Ambur Biryani. Other popular options include the Gongura Biryani at Rs 300, Jackfruit Biryani at Rs 250, and Vangi (eggplant) Biryani at Rs 320.
The trend has particularly resonated with younger diners. "As someone who often dines out with vegetarian and vegan friends, these new options are a game-changer," says a local student. "After trying the Vangi and Gongura Biryani in Vijayawada, my taste buds were forever changed. Now our vegetarian group regularly orders these different cuisines."
