Park Hyatt celebrates the simple and fresh flavours of Italian cuisine.

The International Day of Italian Cuisine (January 17) is an annual event and this year, Park Hyatt in the city is taking part as well. And this time too, the official dish is the simple and delicious — Spaghetti al dente with tomato sauce and basil.
Apart from celebrating the day, the folks at Park Hyatt are also conducting a master class presided over by their Italian chef Daniele on January 17. For those of you who won’t be able to make it in person, we bring you the recipe straight from the kitchens of Park Hyatt.

Spaghetti al dente with tomato sauce and basil

Ingredients

  • 400 gm durum wheat Italian spaghetti
  • 2 cans of Italian peeled tomatoes (San Marzano) or 600 gm tomatoes
  • Fresh garlic
  • 5 tsp extra virgin
  • olive oil
  • Salt
  • Fresh basil

Method:

In a large pan, lightly brown the fresh garlic in the extra virgin olive oil (avoid burning it or it will taste bitter). Add the tomatoes and cook at medium heat for 8-10 minutes. Cook the spaghetti al dente, drain them and toss in the tomato sauce for 1-2 minutes over medium heat. Put the spaghetti in individual previously warmed plates; add some sauce, a few drops of extra virgin olive oil and a couple of fresh basil leaves on each plate. Serve warm.
