If ever you’ve bought ready-peeled, sliced, cubed fruit from the supermarket, and then wondered why you bothered; or if you got home to discover the fruit is brightly hued but dimly flavoured, this is the solution. Anything dunked into butterscotch sauce tastes good, and this makes for a fabulous everyday or even party
pudding:

Ingredients
45 gm brown sugar
2 tbsp granulated sugar
150 gm golden syrup
30 gm butter
125 ml double cream
A splash of vanilla extract
350 gm cut fruits of your choice

Method
  • Melt the sugars, syrup and butter in a saucepan and boil for 5 minutes.
  • Add the cream and vanilla extract, stirring together, and then take off the heat.
  • Divide the sauce between two cups or small bowls, and then arrange the fruit on two saucers or on a plate, as you see fit. Dunk the fruit into the sauce and savour!
