Mumbai: One may have tried a whole lot of cognacs, but the Pale & Dry variant is really hard to come by. Delamain’s Pale & Dry is a unique blend of cognacs that showcases distinct flavours. This is a blend of various old Grande Champagne cognacs, appropriately aged and then matured in well-seasoned oak casks. It is so named because in appearance it is much paler than other cognacs of this age and “dry” because it has only its natural sweetness.


Each of the cognacs have been aged separately, then joined together and married for a further two years, to create a stunning and cohesive XO. It is a light shade of amber with flecks of gold. The bouquet is multi-layered with powerful and intense floral aromas, backed by distinctive notes of vanilla. Its subtle but full palate blossoms into a full-bodied fruitiness, with hints of liquorice and vanilla. One can even stumble upon lovely caramel flavours and a hint of Armagnac.
Serve as a digestive, or as a partner to chocolate and other desserts.
