Refrigeration good for eggs

Hyderabad: Eggs must be refrigerated and can be kept in good condition for two weeks. Storage of eggs at room temperature causes reduction in quality within one week. The shelf life of eggs is three weeks.

A poultry owner, Mohammed Raza, explained, “Separation of eggs begins as soon as they are laid. Those which have to be reused for birthing are kept in the cage while others are moved out. While doing this, handlers have to wear gloves and aprons. This is the time when contamination occurs.” Soiling, cracking and breaking also take place during this time. 

Recently, the FSSAI proposed standards for eggs. The parameters state that eggshells must be free of blood stains and must not be soiled or have fecal matter on them. The food body has also stated that eggs must not be cracked or leaking. 

A special emphasis is put on storage conditions like moisture and temperature to reduce the microbial contamination as it is a major risk to human health. Washing, cleaning and storage of eggs in relative humidity have been recommended as implementation at the ground level will be done only after the Food Products Standards and Food Additives Amendment Act is passed.
