So corny
There is nothing more delicious than sinking your teeth into some corn this monsoon.
Ingredients
3 onions, chopped
2 corn cobs
1 tsp garlic, chopped
1 tsp ginger, chopped
1 red bell pepper
2 tbsp spring onions
2 tbsp chilli flakes
Salt to taste
2 tbsp rice flour
1 egg
Oil for deep frying
Method
Separate the corn kernels from the cob and make a coarse paste by blending it. In a bowl, add the corn paste, salt, chilli flakes, spring onions, bell peppers, chopped ginger and garlic, chopped onions, rice flour, and the egg and mix well. Make small roundels out of the mixture, flatten them and fry in hot oil. You can serve this with sweet garlic sauce.

250 gm baby corn
1 tbsp all-purpose flour
1 tsp corn starch
1 tsp ginger-garlic paste
Salt to taste
1 tbsp sesame seeds
Oil for deep frying
1 tsp garlic, chopped
1 tsp chilli flakes
1 tsp tomato ketchup
1 tsp soya sauce
1 tsp vinegar
1 tbsp spring onions
½ tsp sugar
Method
In a bowl add all-purpose flour, corn starch, ginger-garlic paste, salt, water and make a thick batter out of it. To that, add the baby corn, sesame seeds and mix it well. Then fry the baby corn lightly, in oil that is not too hot, without letting it cook completely, set aside.
Heat oil in a pan and add the chopped garlic, saute it and add chilli flakes, tomato ketchup, soya sauce, vinegar, sugar, salt, then add the half-fried baby corn, toss it and add spring onions, mix well. It’s ready to serve.

1 chopped cucumber
1 bell pepper
3 green chillies
2 tbsp grated coconut
2 medium tomatoes
1 tsp red chilli powder
½ tsp lime juice
1 tsp chaat masala
A pinch of salt
A pinch of sugar
¼ cup of sev
½ cup of boondi
Method
In a bowl add the sweet corn kernels, chopped cucumber, onions, bell pepper, tomatoes, coconut and mix well. To that add red chilli powder, chopped green chillies, chaat masala, salt and sugar and top it with chopped coriander and lime juice, mix once again. Garnish this with sev and boondi.
Sweet corn in rich onion sauce
Ingredients
2 corn cobs
2 large onions, chopped
2 garlic cloves
2-inch piece of ginger
¼ tsp turmeric powder
½ tsp onion seeds (optional)
½ tsp cumin seeds
1 tsp chilli powder
6-8 curry leaves
½ tsp sugar
1 cup yoghurt
Oil
Salt to taste
Method
Cut the corn cob into pieces of one-inch each and also shave a few kernels and set aside. Meanwhile, grind together the onions, garlic and ginger. To the above mix, add the spices, curry leaves and sugar. Heat oil and fry the corn pieces till they turn golden brown.
Remove excess oil and fry the onion-paste mixture until oil separates. Add the shaved corn pieces and the fried corn cobs. Mix well. Lower heat and fold in the yoghurt. Simmer for 2-3 minutes. Add salt and take off the heat.
