During this season of penitence, home makers share their favourite recipes that could be made easily at home.
Tuna burgers
Ingredients
7 ounce pouch tuna in water, drained and juice reserved
3 tbsp finely chopped onion n 3 tbsp finely chopped celery with leaves
1 large egg
¼ cup dry bread crumbs n 2 slices day-old bread (cubed) n 1 pinch garlic powder or to taste n 1 pinch salt and ground black pepper to taste n 3 tbsp olive oil.
Method
Mix drained tuna, onion, celery, egg, bread crumbs, bread cubes, garlic powder, salt and black pepper in a bowl. If mixture is too dry to hold together, stir in reserved tuna juice, adding 1 tsp at a time. Divide mixture in fourths and shape each portion into a patty.
Heat olive oil in a large skillet over a medium heat and pan-fry the patties until golden brown, about three minutes per side. Drain patties on paper towels.

Mix vegetables in chilly sauce
Ingredients
Carrot 1 piece (diced)
Mushrooms ½ cup (sliced)
Broccoli, a few florets diced
Baby corn 3-4 diced
Pakchoy, a small head sliced length wise
Red bell pepper - half (finely sliced)
Yellow bell pepper half (finely sliced)
Tomato puree half cup
Chilly paste 1 tsp
Chilly oil 1 tsp
Vinegar a few drops
Salt to taste
Sugar ½ tsp
Maggi magic sauce, a small dash
A few broken dry red chillies
Corn flour ½ tsp
Spring onion 1 (sliced fine)
Method
Fry red chilly. When it turns slightly brown, add vegetables. Toss in a wok on high heat and add a dash of water. Add all the sauces and a ladle of vegetable stock. Keep tossing on high flame as water evaporates, add salt, sugar, vinegar and corn flour as thickening agent. Reduce heat and simmer for a few minutes till the gravy thickens and coats the vegetable. Plate and garnish with spring onions and serve hot.

Spinach pie
Ingredients
2 pounds spinach, rinsed and chopped. 8 ounces feta cheese, crumbled 1 (8 ounce) container cottage cheese ½ cup chopped onion. ¾ tsp poultry seasoning 2 tsp chopped fresh dill ¼ tsp ground black pepper Salt to taste 2 cups bread crumbs n 4 tbsp butter, melted.
Method
Preheat oven to 350° F (175° C).
Lightly grease one 9x13 inch casserole dish.
In a large bowl, combine spinach, feta cheese, cottage cheese, onion, poultry seasoning, dill, pepper and salt.
Mix well and pour into prepared dish.
Mix breadcrumbs and butter together.
Sprinkle over spinach mixture and bake at 350° F (175° C) for 30 minutes.
