Try these exotic chicken recipes this Eid

After a month of fasting, millions of Muslims are getting ready to observe the end of Ramadan.

While traditions to mark the occasion vary from country to country, food will be central in celebrating the festival Eid ul-Fitr.

Freshmenu has two exotic chicken recipes to add to your luscious feast this year.

1. Creamy Spaghetti Chicken Charcuterie

Ingredients:

Spaghetti 150 gms
Chicken frankfurter  90 gms
Chicken bacon 50 gms
Onion (julienne) 20 gms
Garlic (chopped) 3 gms
Chilli red (sliced) 3 gms
Cherry tomato (cut in half) 20 gms
Demi glaze powder 25 gms
Water/stock 100 gms
Fresh cream 20 gms
Olive oil 5 gms
Salt 3 gms
Pepper 2 gms
Parsley (chopped) 2 gms

Preparation Method:
- Blanch spaghetti pasta in salted boiling water and strain. Drizzle oil, mix and keep aside to cool.
- Cut chicken bacon in strips and chicken frankfurter in slices.
- Heat water in a saucepan, mix demiglace powder and bring to boil. Simmer to sauce consistency.
- Heat oil in a pan, Sautee chicken bacon followed by chicken frankfurter. Toss well. Add julienne onion, chopped garlic and chilli.
- Once onion is translucent, add jus, season with salt and pepper. Toss blanched spaghetti in it. Mix well.
- Add fresh cream towards finish. Mix cherry tomatoes. Toss well and check seasoning. Garnish with fine chopped parsley.
Serving Suggestion:  Goes well with Garlic bread.

Smoked Chipotle Pesto Chicken Burrito

Ingredients:
 A - Smoked chipotle chicken
 Chicken leg boneless 180 gms
Chopped garlic  3 gms
Chopped fresh thyme  1 gms
Salt  1 gm
Pepper  1 gms
Tobasco chipotle sauce  3 gms
Chipotle seasoning  1 gms
Lemon juice  1 gm
Chilli paste  5 gms
Oil  5 gms

 

B - Fajita vegetables

Peppers cut into squares  40 gms
Zucchini cut into squares  40 gms
Button mushroom cut into halves  20 gms
Carrot cut into squares  20 gms
Chopped garlic  3 gms
Salt 1 gm
Peppper 1 gm
Chopped coriander 1 gm
Roasted jeera powder 1 gm
Butter 3 gms

C Tomato paprika sauce 70 gms

D Pesto rice

Basil pesto 10 gms
Boiled rice 180 gms
Salt 1 gms
Pepper  1 gms
Deseeded blanched tomato  20 gms
Boiled kidney bean 10 gms
Chopped onion  5 gms
Chopped garlic 3 gms
Lemon juice 1 gms
Sour cream 10 gms

E - Tossed olives and cherry tomato
Olives 5 gms
Cherry tomato 5 gms
Chopped garlic 1 gms
Seasoning 1 gms

 

Preparation Method:

* Smoked Chipotle Chicken
- Marinate the boneless chicken leg with chipotle seasonings and chopped garlic for an hour.
- Grill it well on the griller. Finish it in the oven and then slice it up.
 
* Fajita Vegetables
- Sautee garlic and add fresh cut vegetables.  Adjust seasonings, roasted jeera powder and chopped coriander.
 
*Pesto Rice
- Sautee onion and garlic.
- Add diced de-seeded blanched tomato and toss it well.
- Add kidney beans.
-  Add rice, adjust seasoning, and add basil pesto off range.
-  Add lemon juice.
- Toss olives and tomato with chopped garlic.

Serving Suggestion:
Add tomato paprika sauce then add the pesto rice. Arrange the sliced chipotle chicken pieces and then add veggies.  Add sauce and cherry tomato on the top.
